記得小時候我媽親自調製的紅糖豆沙餡,對於兒時又極愛吃甜食的我絕對是一款無以倫比的美味!每次要製作這道甜品之前的前一天,媽媽先會把紅豆放在水裡浸泡待用。大概浸泡24小時左右,到第二日中午再把紅豆撈出來用清水沖洗乾淨放入高壓鍋里燜煮1個小時左右,再瀝干水份後,倒入另外一個小鐵鍋中繼續用文火加熱,再加入許多紅糖,並不斷翻炒,這其時,紅糖在加熱的過程中慢慢融化變成深咖色亮晶晶的糖絲並漸漸融入到紅豆中,完美的結合在一起。並且紅豆與紅糖融合在一起的清甜香味瀰漫開來。兒時的我便迫不急待地央求媽媽快些給我乘點出來品嘗。於是,清甜的味道一如既往地征服了我。太美味啦!!!
記憶延伸到小時候,甜酒是最令我印象深刻的!
上等精選出來的糯米作為原料,用清水蒸熟後加入甜酒麴,放入密封乾淨無油的容器裡面發酵幾天,就可以聞到一股濃濃香香的酒味,喝上一口,大有「此酒只應天上有」的那種感覺。長大後,又被誘人的玫瑰醬驚艷到了!玫瑰醬是用新鮮可食用的玫瑰花瓣製作而成,濃濃純純玫瑰花香,甜甜的,吃了之後,感覺到「嘴有餘香」,太能勾起吃了還要吃的慾望啦!
