買一斤豬腰條肉(五花三層)切成肉丁放入鍋里焯一下。水中加點兒薑片八角料酒去腥。把焯好的肉丁放入鍋中炒出油取出。再在鍋中放入少許豆油放入一兩冰糖慢炒熬糖色。熬好後把肉丁放入扁炒。使每個肉丁都粘上糖。然後加入蔥花薑末八角香葉辣椒,加入適量水煮一個小時收汁裝盤。此法作出的紅燒肉,色澤紅潤,晶瑩惕透,油而不nⅰ入口即化。是宴請賓朋壓桌美味。
