土豆絲怎麼炒比較脆?

土豆絲如果要炒的脆,一定要在炒之前做到兩步:
第一,切絲要均勻,要細;
第二,切好絲後要過一遍水,放入冷水中,可以把土豆裡面的澱粉洗掉,這樣炒土豆絲就不會糊鍋。
