飯館裡做茄子,喜歡用油炸,油炸過的茄子雖然好吃入味,但肯定是不太健康的,茄子是營養豐富的蔬菜,含有無機鹽鉀,但是高溫油炸之後就會大量丟失,茄子當中還含有維生素p,具有降低血脂的功效,但是油炸之後,反而吸收了更多的脂肪,降血脂就成了一句空話,怎樣做茄子最有營養呢?

1. 涼拌茄條,是把長茄子縱向切成條,放在鍋里蒸10到15分鐘,取出來,把多餘的水分控干,加入芝麻油、生抽,醋,蒜泥,芝麻醬,涼拌,茄子的汁也有營養成分,涼拌的時候,先倒入芝麻油,就可以鎖住多餘的水分了。

2. 西紅柿炒茄丁,西紅柿和圓茄子切成丁,熱鍋涼油,放入茄子煸炒,加一點醋,用小火燜兩分鐘,等茄子變軟的時候再加醬油,最後倒入西紅柿丁,加入蒜末,翻炒幾下就可以出鍋了,盛菜的時候,要注意不要把多餘的油一起盛出來。

最有營養的無非是清蒸水煮,油炸的不太好,介紹你一個守擂茄子,茄子蒸透放涼,然後用乾淨白布把茄子放進去稍微擠一下,準備一個碗加進去蔥花,香菜,蒜泥,醬油,鹽,香油少量糖,也可以再放一個熟雞蛋,加進去擠好的茄子,用擀麵杖或者蒜杵搗碎搗勻即可
