皮蛋瘦肉粥怎樣才能煮的香濃可口？

首先，我們從鍋的選用開始；類似於熬粥，建議用高壓鍋，因為高壓鍋與一般的鍋不一樣，在封閉式高壓的烹飪下，可以留住粥的香味，最大程度的保證粥糯潤香美。

其次，米一定有淘洗兩次，不能洗完就干晾著，這樣米的營養會流失，淘米之後直接放入高壓鍋，放入適量的水，蓋上蓋子，大火開始煮米。

然後，米煮開後，小火進行五分鐘降溫，將鍋從火上取下來，靜置降溫，打開鍋蓋，放入皮蛋和瘦肉，還有準備好的蔥，油鹽都要適量放入。

最後，不要蓋蓋子，直接放到火上煮，邊煮邊用勺子攪拌，約十分鐘後停火，美味的皮蛋瘦肉粥便出來了，記得不要煮太久，因為瘦肉會煮老的，就不好吃了。（建議煮之前，將瘦肉用鹽和澱粉腌制十分鐘，這樣肉比較嫩，入口即化）
