"金花"是一種黃色顆粒狀菌體，學名「冠突散囊菌」。一般存在於黑茶中的茯磚茶內，茯磚茶最重要的一道工序就是發花，金花普遍、茂盛、色澤鮮艷、呈金黃色，不含雜菌，金花茂盛與否是茯磚茶品質的體現。金花生長好的茶滋味醇和，經過後期的轉化，苦澀味逐漸褪去，更能去油膩，利消化。
