Ladies, gentlemen, children: we continue our series about cheese. For this article, we introduce you the correct ways of eating it, while showing some elegant and proper manners, no matter if you are at home or in a high-end restaurant.
之前曾分享過關於乳酪的禮儀{餐桌禮儀} 你知道切乳酪的正確禮儀嗎?,今天將繼續為大家介紹:吃乳酪時的8條規則。
Several weeks ago we introduced you the etiquette of cheese service. Now it』s finally time to taste: follow our 8 guidelines.
規則1:順序
Rule 1: the order
禁忌:不要各種口味調換吃。
Don』t: you shall not start to eat cheese in a random order.
建議:傳統意義上,應該從口味清淡的乳酪開始吃,再過渡到口感強烈的乳酪:從山羊乳酪過渡到牛奶乳酪。這樣才能更好品味出不同乳酪的味道。可以隨個人喜好。
Do:Traditionally, you start from the lightest to the strongest in terms of taste, in order to preserve the tastes: from goat』s cheeses and continue with cow』s cheese. But nowadays it depends on your own preference.
規則2:氣味
Rule 2: the smell
禁忌:假設打開一份年代較久的卡蒙貝爾乳酪,不要去聞乳酪的氣味,更不要說乳酪「很臭/難聞」,即使屋子裡的每個人都心知肚明乳酪的氣味會有些特殊。否則有些違反法式美食理念。
Don』t:never smell a cheese, and, worse, never say a cheese 「stinks」, even if everyone in the room can』t breath after opening an old camembert. It would be a crime against French gastronomy (at least).
建議:注意辭彙的選擇,可以微笑表明乳酪味道「強烈」。
Do:potentially, you may say this cheese is 「strong」, with a smile of course.
規則3:乳酪邊
Rule 3: the rind
軟乳酪:軟乳酪的邊通常不會那麼硬,呈白色,是可以直接食用的。例如卡蒙貝爾乳酪和布里乾酪。
Soft cheeses:Dont be afraid to eat the rind from soft, creamy cheeses. This rind is usually soft and white, like for Camembert and Brie.
硬乳酪:硬乳酪的邊很硬,像蠟一樣。有些人會直接食用乳酪的硬邊,但是大多數人會把硬邊切掉。例如切德乾酪和格呂耶爾乳酪。
Hard cheeses:Some people would also eat the rind of hard cheese, but most would peel or cut it off. The rind is usually hard and waxy. Examples of cheeses where you should peel/cut the rind off include Cheddar or Gruyere
規則4:是否用手指?
Rule 4: fingers or not ?
禁忌:不要用手拿乳酪(只有在雞尾酒會或者家庭休閑聚會中,有切成小塊的硬乳酪供應時方可用手拿)。
Don』t:never take any piece of cheese with your finger (it』s acceptable only in standing cocktails with small pieces of hard cheeses).
建議:用乳酪刀將切下乳酪,放入自己的盤中後,可以使用自己的甜點刀叉吃乳酪,或者將乳酪放在麵包上,再用手拿著麵包食用。
Do: the cheese service is with the cheese knife from the platter to your plate. Once in your plate, either you eat it with the dessert fork and knife directly, or you use your cutlery to place your piece of cheese on a piece of bread, which you may grasp with your fingers.

規則5:麵包
Rule 5: the bread
禁忌:不要直接將一大塊乳酪放在整塊的麵包上。
Don』t : don』t go plopping a whole wedge of cheese on a hunk of bread like some kind of savage.
建議:掰開一小塊麵包,在麵包上放少許乳酪,最好是可以一口吃掉的大小。
Do :take a small piece of bread, a small piece of cheese. Just gently place the morsel of cheese on the bite-sized morsel of baguette.
規則6:薄餅,三明治,不要塗抹
Rule 6: no crackers, no sandwich, no spreading
禁忌:不要拿薄脆餅乾當餐具吃乳酪(雞尾酒會可以)。晚宴中,不要用乳酪和麵包做三明治,不要像抹黃油那樣抹乳酪。
Don』t : never use crackers for eating cheese (again, it』s acceptable only in standing cocktails). At a dinner, never do a sandwich with your bread over the cheese, you are not in a fast-food. And never use your knife to spread the cheese on the bread like some vulgar butter.
建議:搭配乳酪的麵包可以選擇白麵包,黑麵包,全麥麵包等,只需要將乳酪小心放在麵包上即可。
Do:you may use a wide range of breads: white, dark, with grains, etc. Only place the piece of cheese on the bread without crushing it.

規則7:和水果搭配
Rule 7: pairing with fruits
乳酪適合搭配口感偏甜的食物,尤其是和水果搭配(柑橘類除外)。以下建議供參考:
Cheeses go well with sweet items in general, especially fruits (but avoid citrus). You may consider this advice :
- 果乾和硬乳酪搭配如杏子干,櫻桃干,無花果乾
-Try dried fruit with hard cheeses, such as: apricots, cherries, and figs.
- 新鮮水果搭配新鮮乳酪如棗子,無花果,杏子和提子
-Try fresh fruit with fresh cheeses, such as: dates, figs, apricots, and plums.
規則8:搭配果醬
Rule 8: Jam pairings
個人很喜歡把乳酪和果醬搭配來吃(尤其是草莓醬配山羊乳酪),非常美味!也可以和蜂蜜或者洋蔥醬搭配。甜味食品不太適合與味道強烈的乳酪搭配,但主要還是看個人口味。親自嘗試一下吧!
One of my favourite ways to eat cheese is with jam (especially strawberry jam to goat』s cheese), it』s delicious! You can also try it with honey, or onion jam, etc. The sweet touch will probably not pair well with the strong cheese, but again it all depends on your own taste. Try by yourself.
當然還有另外一條小規則:通常不再要第二份。但乳酪的美味允許我們適時打破這一規則,就讓我們把這個規則當成小秘密吧。
Just for once we will allow you to break one rule: normally you shall not ask for a second helping of cheese. Yes, this is true. But it is so good, that we shall now tolerate a second (but moderate) service. Let』s keep it our little secret.
