為什麼都要用象徵伊斯蘭教的新月？
有什麼寓意和典故出自嗎？

我補充一些例子。

可以參考一下歷史上拜占庭城邦的歷史城徽（ @清廉正直乃夫鷹）：

其中前者來自拜占庭城邦的守護神阿爾忒彌斯，而後者則可能是來自波爾多的一個稱呼「月亮港」（port de Lune）。

實際上，新月或者新月抱星的元素，最初在伊斯蘭教藝術當中並不常見，一般認為把這一切帶入伊斯蘭世界的恰恰是奧斯曼帝國。而這裡新月的圖案，一般說與拜占庭的傳統有很大關聯，也可能受了一定的波斯藝術影響。總之，不能認為新月或者新月抱星是伊斯蘭教的象徵。

P.S.今後不打算活躍了，不會經常出現，會不定期退乎，這可能是我最後幾個答案之一……

Odele 是這樣的：

In a blue shield is a silver (=white) lying moon-crescent topped by a silver (=white) 6-point star.
Meaning:
The coat of arms was used before 1890 and was granted by the Prussian king in 1910. The origin of the coat of arms is not clear. The moon however is said to be an attribute of St.John the Baptist, whose image could be proved to be on the seal of Oelde since 1754. Source:Stadler 1972, p.75

至於 Halle:

Halle became a city in the 14th century. Before this two councils ruled the area, the "mountain-council or Berggericht" and the "valley-council or Talgericht". Both already used the crescent and some stars in their seals, dating from the early 14th century. The oldest seal of the city itself dates from the end of the 14th century and shows the St. Mary with child on a throne. On both sides of the throne and below it, there are three shields with the present arms. The arms have not changed ever since.

城市是兩個 councils 共同管理的，然後他們兩個都有星月做印，因而合併以後就這樣了。

另一個來源說它的六芒星指的是這裡產鹽，然後六芒星代表鹽晶。

伊斯蘭世界大量的使用星月也是這幾百年來的事情，奧斯曼帝國攻克君士坦丁堡之後開始把君士坦丁堡的市旗（一顆星和一輪新月）拿來作為自己的標誌，然後這個標誌在伊斯蘭世界廣泛的傳播（畢竟奧斯曼帝國當時是伊斯蘭世界的第一強國），所以今日我們才會把星月作為伊斯蘭世界的標誌。

（謝 @姜委員長提示，英文wiki的crescent詞條提到msl使用新月是受到波斯影響，而且開始使用的年份也比較早，不過奧斯曼使用星月應該是受到了君堡市旗的影響）

所以，這兩座城市有星月旗也就絲毫不足為奇

不要什麼都和這個聯繫起來，誰抄襲誰還不一定呢。

當然，兩個地方同時獨立選用星月做標誌也是有可能的。
